We are seeking an experienced European Grill Seafood Sous Chef to join our dynamic culinary team. Key Responsibilities:
1. Oversee daily kitchen operations, ensuring the highest standards of quality, consistency, and efficiency in seafood preparation and cooking.
2. Lead and mentor a team of 10 kitchen staff, fostering a collaborative and positive work environment.
3. Collaborate with the Executive Chef to develop and refine seafood menus, incorporating seasonal ingredients and authentic European cooking techniques.
4. Ensure proper preparation, presentation, and seasoning of seafood dishes, adhering to European culinary traditions and standards.
5. Train and guide junior chefs and kitchen staff in advanced seafood preparation techniques, food safety practices, and kitchen cleanliness.
6. Experiment with new seafood dishes and seasonal offerings to keep the menu fresh and exciting for guests.
7. Maintain strict adherence to food safety and sanitation regulations throughout the kitchen.
8. Contribute to menu planning, incorporating regional European influences and authentic cooking methods.
9. Assist in inventory management, cost control, and quality assurance of seafood and other ingredients.
10. Participate in special events, promotions, and culinary demonstrations as required.
Required Skills and Qualifications:
1. Culinary degree or equivalent professional kitchen experience.
2. Minimum 3-5 years of experience in European seafood cuisine, with proven expertise in various regional styles and cooking techniques.
3. Previous experience as a Sous Chef or in a similar leadership role, demonstrating the ability to manage kitchen operations and lead a team effectively.
4. In-depth knowledge of European seafood dishes and their regional variations, including Mediterranean, French, Spanish, Italian, and Scandinavian cuisines.
5. Strong leadership, communication, and organizational skills, with the ability to motivate and inspire kitchen staff.
6. Excellent time management and multitasking abilities, thriving in a fast-paced kitchen environment.
7. Creativity and innovation in menu development and dish presentation.
8. Thorough understanding of food safety and sanitation regulations, with the ability to implement and enforce them.
9. Proficiency in English; additional European languages are a plus.
10. Flexibility to work varying shifts, including evenings, weekends, and holidays as needed.
